Recipe - Roasted Cinnamon Almonds

I wanted to make a healthy snack to bring to work so the last time I was at the Bulk Barn I picked up some natural almonds.  A few years ago, I used to carry almonds with me at all time so I would always have something to eat if I got hungry.  Unfortunately, I am now sick of eating plain almonds, I needed to do something with them.  Here is what I did.


Cinnamon Roasted Almonds

2 tsp ground cinnamon
2 tsp sugar (you can also try powdered sugar, it dissolves better)
1/4 tsp salt
2 cups raw almonds
cooking spray


Preheat the oven to 375 degrees F. 

In a large bowl, stir together the cinnamon, sugar and salt. 

Spread almonds in a single layer on a cookie sheet.  Roast in preheated oven for 5 minutes.  Remove tray from oven, stir and shake around.  Place the tray back in the oven and roast for another 5 to 7 minutes until the nuts are lightly fragrant. 

Remove tray from oven and immediately spray the almonds with cooking spray.  Shake the tray a few times and spray again.  

Place the nuts in the bowl with the cinnamon mixture and stir to coat. 


Spread onto a cooling rack lined with a piece of waxed paper.  Cool completely and then store in an airtight container.


The nice thing about these nuts is that even though it has sugar and salt, you know how much is there, and you know exactly what's in it.  I overheard a kid ask his father if the thing they were buying had an "factory sugars" in it, as opposed to the naturally occurring sugars in fruit.  I liked that.  Sugar isn't bad, but all of the added and manufactured sugars are the problem.
