Recipe - Paninis

I've recently started making more paninis for our supper.  We don't always need a large meal, and it is a good way to use up our leftovers.  This week I used up our leftover roast beef and made a delicious panini. 
Preheating the panini press is a key first step.

I spread horseradish and mayonnaise on one side of the bread.  If I'm using turkey or chicken, I spread pesto on the bread.

Topped with provolone, and as any good Jamie Oliver fan knows, drizzle generously with olive oil.  Transferring to the pan and then flipping them is always a challenge. I've mastered a combination of tongs and flipper. (I use the term "mastered" loosely.  When I made these ones, I had a slight mess when I put them on the pan. E says to Dave "Why is Mom saying Uh-Oh?")

But they all came together and they were delicious.
 

 
Now mix it up with different cheese, meat, spreads, and fillings.  Easy and delicious.
