Camping Food

We are going camping this weekend.  It will be our first of two camping trips for this summer.  As always my focus is on the food we are going to bring.  After watching that documentary about the healthy eating, I quickly realized that our camping standards are not the best choices.  That being said we will still be having hot dogs, marshmallows and grilled cheese sandwiches made with Kraft singles.  However, we do want to bring healthy snacks along too.  I found a few ideas on Pinterest of course, and we will incorporate some of our regular homemade foods that will translate to the campground.

Pancakes from Scratch

We will bring along the dry ingredients for the pancakes in a ziploc bag, and then add the eggs and milk while we are there.  Even while camping it is still easy to make pancakes from scratch and they are so much better than boxed pancakes.

Dry ingredients:
1 cup white flour
1 cup whole wheat flour
1 cup oatmeal
2 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 cup brown sugar

Liquid ingredients to add right before we make them:
2 eggs
2 cups milk
1/4 cup vegetable oil

(if you're making these at home you can also add 1 tsp vanilla, we won't bother this time)


I will make this recipe for broccoli salad.


We will try baked apples as a fireside treat.  Slice apples, sprinkle with brown sugar and cinnamon, and then wrap in foil and cook over the fire until the apples are soft.

We also like bringing a big container of cut up vegetables. I am bringing along this dip instead of using a jar of salad dressing:

1 1/2 cup of Hellman's Mayonnaise (light mayo and Miracle Whip cannot be substituted, it will be too runny)
1 tsp dry mustard
2 tsp curry powder
salt and pepper

Mix together, and keep cool.



So although we won't be completely healthy while camping, we are making a few smart choices along the way.

This is two years ago, same campground we are going to this year.
