We like to make blueberry muffins but since the wild ones are so expensive here, and the cultivated ones are too big, I decided to try this recipe for strawberry muffins. They are a good substitute.
(Yes those are Christmas muffin cups)
1/2 cup butter, softened
3/4 cup white sugar
1 egg
1/2 tsp vanilla
2 cups flour (I used whole wheat)
2 tsp baking powder
1/2 tsp salt
1/2 milk
1 1/2 cups chopped strawberries
3 tsp white sugar
1/2 tsp cinnamon
Preheat oven to 400 degrees F.
Cream butter and sugar together in a large bowl. Add egg and vanilla and mix well.
Combine flour, baking powder and salt in a small bowl. Add half of flour mixture to butter mixture and stir. Add half of the milk and stir.
Add remaining flour mixture and stir. Add remaining milk and stir.
Gently stir in strawberries.
Spoon batter into muffin pans (this recipe makes 12 muffins). Combine remaining sugar and cinnamon, sprinkle over the top of each muffin.
Bake for 20-25 minutes .
They don't last much longer than a day or two so feel free to indulge and eat them up!
