Apple Cinnamon Cookies

I don't want to jump the gun on summer but now that school has started, I know fall is right around the corner and I want to start making apple and pumpkin recipes.  This week I made some apple cinnamon cookies.  They are perfect to have with your coffee in the morning and to stick in a lunch box.

1 cup butter, softened
1 cup brown sugar, packed
2 eggs
1 tsp vanilla (I used vanilla bean paste this time)
1 1/2 cups whole wheat flour
1 tsp baking soda
1 tbsp cinnamon
1 cup grated apple
3 cups oatmeal (quick oats or regular)

Cream butter and sugar together with electric mixer.  Beat in the eggs.  Add vanilla and stir to combine.

Stir in flour, baking soda, and cinnamon to wet ingredients.  Fold in apple and oatmeal.

Drop by spoonful onto a cookie sheet.  Bake for 8 to 10 minutes in a preheated 350 degree F oven.  I let them cool on the pan for 5 minutes before moving them to a cooling rack.   Makes about 4 dozen.


If you make them small enough, you can justify having three at a time!
