Recipe - Peppermint Cookies

These cookies are so tasty and a favourite in this house.  I whipped up a batch for our upcoming party this week.



1 cup butter, softened
1 cup white sugar
2 egg yolks
1/2 tsp vanilla (I used vanilla bean paste)
2 1/2 cups white flour
1/2 tsp being powder
1/2 tsp salt
1/2 cup + 3 tbsp crushed candy canes
3 tbsp icing sugar


Cream butter and sugar together until fluffy.  Add egg yolks, beat well. Add vanilla.  Beat until smooth.

Combine flour baking powder and salt in a small bowl.  Slowly add to butter mixture while mixing.  Add the 1/2 cup crushed candy canes to dough and mix until fully combined.


Roll dough into 1 inch balls.  Arrange on greased cookie sheet or sheets lined with silicone mats.  Bake in 350 degree F oven for 10 to 15 minutes until golden.  Let cool slightly on cookie sheets for 2 minutes.

Mix together 3 tbsp crushed candy canes and icing sugar in a small bowl.  Press top of each cookie into candy and sugar mixture until coated.

Cool in wire racks.
