Weekly Menu

A peek at what we're eating this week:

SundayPizza Waffles.  The only thing I didn't like about this recipe was that the batter was too thick so I added more milk and some water.  I used veggie pepperoni and no one noticed.  

Monday - Salad Bowls.  I roasted sweet potato, broccoli, chick peas, and kale. Defrosted some beets, and served it over quinoa (which I always cook in a broth instead of plain water).  I used Earthy Andy's OG Salad Dressing Recipe.


Q got his own version:


TuesdayHoney Mustard Chicken Salad.  This has chicken thighs, bacon, avocado, lettuce, tomato and pickled onion.  The sauce was a little sweet for me, but very tasty!

WednesdayChicken Meatballs with rice and the rest of the broccoli, roasted again. 

Thursday - Salmon.  I also have some Brussels sprouts that I will probably roast and add some bacon leftover from Tuesday's meal.

Friday - Beef Short Rib Pasta.  I made this recipe a few weeks ago and froze half of the sauce.  It was really good but honestly felt the short rib was wasted in a pasta sauce. Next time I made short ribs I will braise them and serve with mashed potatoes. 

All of these meals were (and will be) easy to make on a weeknight.  I didn't have to prep anything ahead of time, just whipped it up when I was finished with work (and Dave did Tuesday night's supper while I dealt with suspended subway service and shuttle buses). 

On Monday I wrote about looking for the light of Christmas starting now, and not just putting all of your Christmas eggs in one basket of December 25th (I'm mixing Christian holiday references).  Another one popped up this week when I decided to get some Oat Nog.  I enjoyed it last year, but mostly as a vehicle for spiced rum, or even better, Kaluha and Irish Whiskey. ;)

Weekly Menu

A peek at our menu for this week.  

Sunday -  Pasta Fagioli.  Since reading Stanley Tucci's book, I wanted to try his recipe for this as I'd never had it but it seemed like the ultimate comfort food.  It was very good and everyone loved it.  I will make it again. 


Monday - Turkey Lettuce Wraps. This was another hit.  If you tell Q something is a "taco" he will love it, no matter what. So for someone who can be picky about green in his food, he ate this right up.

Tuesday - Roasted Chicken Thighs, Potatoes, and Swiss Chard.


Wednesday - Salad Bowls.  This one was inspired by Earthy Andy's shawarma bowl but I used chicken and sweet potato instead of cauliflower and chick peas.  The accompanying sauce is so good. 


Thursday - Order.  This is supposed to be Family Game Night so we will have an easy supper and play some Sushi Go or Exploding Kittens (and Mario Kart). 

Friday - Hamburgers and Fries.  This isn't something we make often in the winter, but we were craving good homemade burgers. 

Saturday - Chili. Dave requested this meal so we could take some in a thermos for our skiing lunch.

Weekly Menu

 Sharing our meals again for this week:

Sunday  - Steak, mushrooms, carrots, and roasted potatoes.  We make roasted potatoes in different ways but this new (to me) way is so tasty!  I halve small potatoes and toss them in olive oil, Herbes de Provence, and salt, and then bake in a 450 degree oven for about 35 minutes. I think it's the high heat that helps make them so good. 

Monday - Tacos, surprise, we eat tacos almost every week.  

Tuesday - Red Lentil Curry from Oh She Glows Every Day. We make this all of the time too.  It's vegan and the kids love it too. The best part is the mango apple chutney that accompanies it.

Wednesday - Salmon, sweet potato fries, and vegetables.  We used this lemon pepper on the salmon, instead of our usual cajun spice. It was really tasty.



Thursday - Lentil Soup (also from Oh She Glows Every Day) and Focaccia loaf.  I love a good hearty soup in the winter as a supper and then as leftovers.  Q is not always so keen on soup, so the bread fills him up.

Friday - It's pizza night again!  At the start of the pandemic we did pizza night every Friday and thank goodness for that, as we needed something to look forward to! But now we just do it every other week or so. 

Saturday - Order Chinese, as a belated acknowledgement of Lunar New Year.  Our Saturdays are busy with exercise, cleaning, and outdoor time (typically skating) and I like to keep dinner simple.


[Edit, we actually switched Friday and Saturday since I forgot to remind Dave about the pizza dough, which he would have needed to start on Wednesday.  Having pizza on Saturday means we get to have leftover pizza for skiing.]

Weekly Menu

We didn't have any groundbreaking meals this week but what I hope you take from this post is twofold: you may be inspired by one or two meals and that you know you're not alone when you're ordering food ;)

Sunday - Wings and Shishito Peppers.  We like to have a simple supper on the nights we are are coming home from skiing.  The frozen PC wings work just fine. 

MondayTacos.  We were still shovelling snow before supper on Monday night and finally gave up around 6:00.  The kids were actually able to get this meal started and got everything out.  E started the meat and Q warmed up the taco shells.  Dave made the salsa and the only thing I really had to do was wash the lettuce.  The kids should be ready to do this alone in no time!

Tuesday - Salad Bowl.  Another week, another Earthy Andy salad bowl.  This one was a vegan Niçoise  salad.  The "tuna" was mashed roasted chick peas.  This was a hit with the kids too. 

Wednesday - Butternut Squash Mac and Cheese.  Usually I make our macaroni and cheese from scratch using this recipe where its mostly done in the microwave.  But this time I made the roux on the stovetop (starting withs some sautéed onion) and added pureed roasted butternut squash.  It was so delicious! 

Thursday - Order something.  We have been partial to dumplings and noodles lately so we may get that again. 

FridayPizza Night.  Dave's new pizza dough recipe actually starts on Wednesday now so it's well underway.

Saturday - Turkey Dinner.  We have turkey, gravy, and cranberry sauce leftover from Christmas (all in the freezer of course) so this is perfect for a winter weekend.  Turkey dinner is one of my favourite meals.

Weekly Menu

 I used to try and share a new recipe on Thursdays, or some other food related post, but I've felt like I had no new ideas recently so Thursdays are neglected.  Since we meal plan, I thought I would start sharing what we ate during the week in case you need some inspiration for your own meals.  I have written about meal planning many times before (herehere, and here) so you can go there for tips.  This is simply a list of our meals (with a link to a recipe if possible).

Sunday - Korean Beef Lettuce Wraps.  This was actually kind of a dud.  I saw this idea in the President's Choice Insider's Report so I bought the ribs and sauce.  The package of ribs, however, was too small, and I didn't discover this until I opened it up.  It was barely enough for Dave and me, so I made some chicken fingers and carrots for the kids to eat instead, and just Dave and I ate the wraps.  The meat was good, and convenient (only 25 minutes in the oven) but I think I can do better. 


Monday - Noodle Stirfry with Tofu and Spring Rolls.  We had some vegetables to use up and a package of the Costco spring rolls that had been in the freezer for awhile.  Bonus, I got to use that sauce I got for Sunday night's supper.

Tuesday - Taco Bowls.  This is an Earthy Andy recipe and although I know my kids would prefer actual tacos, we still encourage salad bowls about once a week. 

Wednesday - Order Pizza :)The kids had their second Covid vaccine dose so we took advantage of the half price pizzas at QMP.

Thursday - Soup. We have a prepackaged soup mix that we got last year for Christmas but didn't end up using yet.  But I've got all of the extra things it needs and we will make it now.  This came with another soup mix and when we made that one, it was delicious.  Bonus, this one calls for added bacon :)

Friday or Saturday - Roast Beef in the Slow Cooker with mashed potatoes and carrots. We haven't decided if we will do a fire one night and roast some hot dogs so this meal may be shifted.
