Recipe - Banana Chocolate Chip Muffins

Muffins are a staple in our house.  I love making these for a simple quick breakfast - add some fruit and you're good to go.

I have been making the same banana chocolate chip muffin recipe for years but this time I decided to make some substitutions. 

Banana Chocolate Chip Muffins

1 1/3 cups flour (I use whole wheat)
1/2 cup oatmeal
3/4 cups sugar (I used honey this time)
1 tbsp  baking powder
1/2 tsp salt
1 egg
1 1/2 cups mashed banana (about 3-4)
1/2 melted butter or oil (I used applesauce this time)
1/2 to 1 cup chocolate chips (I used the mini ones), or raisins, dried cranberries, nuts, or a combination



Combine dry ingredients in a large bowl.  In another bowl, mix together the wet ingredients.  Pour over dry ingredients and stir until just moistened. Fold in chocolate chips.  Fill muffin tins.  Bake for 20 to 25 minutes at 350 degrees F.

These did not stick to the paper even though they at are fat free.  I think I'll be make these substitutions again.
 
 
This is one of the best mixers I have.  It has a wooden handle with a metal top.  It is perfect for cutting butter or lard into flour for pastry, great for pancakes, and just about anything you're baking.  My Nana gave it to me, I think she got it at the Farmer's Market in Halifax.

  1. I made these muffins today! They are delicious! Unfortunately they did stick to the paper for me. I used honey, but didn't have any applesauce so used butter instead. It could be my oven though, it doesn't cook very evenly.
