Recipe - Fig muffins

I had an open package of figs in the fridge that I thought I should use up so I made some banana muffins and used figs and walnuts in them (instead of chocolate chips).   Something a little different and they were so delicious. I only had enough bananas for a regular batch (I usually make a double batch of muffins) and I was disappointed they disappeared so quickly.


1 1/2 cups whole flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
6 oz black mission figs (stems removed and chopped into small pieces)
1/2 cup chopped walnuts
1 1/2 cups mashed bananas (I used two and it was enough)
2/3 cups packed brown sugar
1/3 cup oil
1 egg
1 tsp vanilla

Preheat the oven to 350 degrees F.  Line 12 muffin tins with muffin cups or spray with Pam.

Combine the flour, baking powder, baking soda, cinnamon, and salt in a large bowl.  Add the figs and walnuts and mix to coat with the dry ingredients. 

In a separate bowl, whisk together the banana, sugar, oil, egg, and vanilla until blended.  Add to the dry ingredients and mix until fully combined. 

Spoon into the muffin tin.  Bake for about 20 minutes.
