We try to eat one salad bowl per week, and lately I have been bringing salads for lunch. A plain old salad with just vegetables doesn't sound too exciting to me, so we build our bowls by choosing something from each of the categories below to make it tasty and filling for a whole meal.
Greens - spinach, lettuce, or kale
Protein - chicken, quinoa, lentils, chick peas, egg, beans
Vegetables (raw or roasted or a mixture)- cherry tomatoes, cucumbers, peppers
Creamy - yoghurt, avocado, hummus, tzatziki
Crunchy - roasted chickpeas, seeds, nuts, tortilla chips
Dressing (optional depending on what your creamy item is), or just a squeeze of lemon, some olive oil, salt and pepper (no measuring required).
Here are some combinations that we like:
Lettuce, chicken, red pepper, shredded carrot, cilantro, green onion, and almond sauce.
Lettuce, black beans, tomatos, peppers, corn, cheese, sour cream, avocado, nacho chips
Kale and arugula, quinoa, roasted squash or sweet potato, dried cranberries, pumpkin seeds, feta cheese
Lettuce or kale, chick peas, quinoa, roasted sweet potato, cucumber, tomatoes, falafel, lemon tahini dressing
Lettuce, bacon, boiled egg, avocado, cheese, dijon vinaigrette
Spinach, roasted potatoes, cheddar cheese, and a runny fried egg.
Kale, roasted sweet potato, lentils, avocado, toasted walnuts
