How We Do Taco Night

Taco Night is a popular one around here.  We don't do it every week but at least once a month.  This is how we do it!

We mostly use ground beef as our filling. Chicken and ground turkey occasionally make an appearance but beef is everyone's favourite. 

Dave makes salsa from scratch. It has more of a pico de gallo texture with larger chunks of tomato, rather than being puréed.  He adds cilantro, onion, garlic, lime juice, sugar, and salt. 

Other toppings - cheddar cheese, chopped lettuce, plain yoghurt (instead of sour cream), and mashed avocado (if we have one) sprinkled with lime juice and salt.  Everything goes into pretty bowls.


We also like a little spiciness - jalapeños and we have recently added some Sweet Habanero hot sauce.  E even likes to add this now.


We use soft shells and we warm them up on a hot frying pan and then keep them warm in a stainless steel bowl with a cover until it's time to eat them.  We like the Casa Mendosa brand corn/flour tortillas, but we also like the ones from La Tortilla Factory.  We have about 3-4 each, depending on the size of the tortilla.  


My order of toppings is as follows: lettuce, meat, cheese, salsa, avocado, yoghurt, jalapeños, hot sauce. 

You have to eat quickly or Q will beat you to the toppings.  He loves tacos (well we all do but he especially loves them).   He is getting pretty good at building his own but still needs some help with the folding.

If there are any leftovers, they are great to have for lunch the next day.  And sometimes I'll make myself a huevos rancheros breakfast.

  1. Now I want some homemade salsa. Once in a very long while, we make homemade taco shells and they are so good. They're a lot of work though so it's a rare treat.
