Recipe - Greek Bowls

This is not a recipe, but rather inspiration for an easy supper. This is quick so it can easily be put together on a weeknight.  It can also be expanded so you can use it for when guests are coming over.  I also have taken this meal camping. 

Greek Bowls and/or Wraps
Grilled Chicken (or pre-made rotisserie chicken).  I marinated my chicken in olive oil, lemon juice, oregano, garlic powder, salt, and pepper all day and then BBQ'd it
Cucumber, chopped
Tomato, chopped
Lettuce
Feta Cheese, broken up
Pitas (we grilled these ones to warm them up, but cold is fine too)
Hummus
Tzatziki
Optional - Rice, Hot Peppers, Radishes, Black Olives

Then just make your bowl with any or all of the ingredients listed above.  The hummus and tzatziki are usually enough of a dressing, but you can also drizzle with olive oil and lemon juice.  


This time I spread the hummus and tzatziki directly on the pita, and piled everything on top and wrapped it up and ate it that way. 
 

Quinn likes this meal because say it's tacos (we can get him to eat anything if it takes the form of a taco) but he usually just sticks to the bread, lettuce, cucumber, and chicken (and rice when we have it), but I'll take it!
